My Super Mixed Grain Porridge

We are just coming out of winter, and my current favourite breakfast is a home made concoction of a warm and comfortable staple - porridge.

I'm guessing I've had this breakfast about 85% of the time in the last 4 or 5 months.  I mix it up myself, and enjoy it usually as I sit at my work desk checking my overnight emails ... and maybe sneak a peak at a blog or two :)

My Super Mixed Grain Porridge


Firstly, I combine (usually in half cup measures):

  • one part rolled oats
  • one part quinoa flakes
  • one part amaranth flakes

With (usually in half tablespoon measures):
  • one part chia seeds
  • one part linseed

In a large container.  This way, I can pre-make a week or two's mix, and not have to take the time every day.

Then into the container, I'll add a good portion of goji berries, the same of barberries (I found these at a local farmers' market - they are really small and tart), and then shake it all together.



At work, I'll take half a cup of the mix, add a decent sprinkle of mixed spices or cinnamon, then stir in about a cup of water (I just eye-ball it - I like my porridge pretty thick).

Once that's all mixed together, I'll also stir through a dessert spoon of my current nut spread.  At the moment, I'm partial to Mayver's organic peanut and coconut spread - yum!



I put the bowl in the microwave for about 2 minutes.  I'll then top with milk, and a side of coffee :)

I also like a Yakult with my breakfast - I swear my daily dose has prevented me from getting really sick this past winter!



Also, if I've done a workout before work, I'll have a protein shake in the car on the way to the train station for my daily commute.

And there you have it - breakfast of champions.  It usually gets me through until lunch!

By the way, I want to give a shout out to my favourite work-local coffee shop in the Melbourne CBD - Kinfolk. Kinfolk is a social business - they redistribute their profits between a variety of selected development projects, and the waitstaff are all volunteers!  What keeps me coming back is the wonderful coffee and food.
